Instructions

- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- In a small bowl, mix the ground cinnamon and brown sugar.
- Heat a non-stick skillet over medium heat and pour in a small amount of batter to form a pancake.
- Sprinkle a little of the cinnamon-sugar mixture on top of the pancake while it cooks.
- Once bubbles form on the surface, flip the pancake and cook until golden brown.
- Repeat with the remaining batter.
- To assemble, take a pancake, add a dollop of cream cheese frosting, and fold it like a taco.
