Instructions
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- Sift together the almond flour, powdered sugar, and salt in a bowl and set aside.
- In a separate mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
- Gradually add the granulated sugar while continuing to beat until stiff peaks form.
- Gently fold the dry ingredients into the meringue in three additions, being careful not to deflate the mixture.
- Add the vanilla extract and ground cinnamon, folding until just combined.
- Transfer the batter to a piping bag fitted with a round tip and pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each macaron.
- Tap the baking sheets on the counter to release any air bubbles.
- Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface.
- Bake for 15-18 minutes, rotating the sheets halfway through, until the macarons have risen and formed feet.
- Allow them to cool completely on the baking sheets.
- For the filling, beat the softened butter until creamy, then gradually add the powdered sugar, vanilla extract, milk, and ground cinnamon, mixing until smooth.
- Once the macarons are cool, pair them up by size, pipe a small amount of filling onto the flat side of one macaron, and sandwich it with the other.
- Refrigerate the filled macarons for at least 24 hours to allow the flavors to meld, then bring to room temperature before serving.
