  • 1 cup powdered sugar

  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 300°F and line two baking sheets with parchment paper.
  2. Sift together the almond flour, powdered sugar, and salt in a bowl and set aside.
  3. In a separate mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
  4. Gradually add the granulated sugar while continuing to beat until stiff peaks form.
  5. Gently fold the dry ingredients into the meringue in three additions, being careful not to deflate the mixture.
  6. Add the vanilla extract and ground cinnamon, folding until just combined.
  7. Transfer the batter to a piping bag fitted with a round tip and pipe 1.5-inch circles onto the prepared baking sheets, leaving space between each macaron.
  8. Tap the baking sheets on the counter to release any air bubbles.
  9. Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on the surface.
  10. Bake for 15-18 minutes, rotating the sheets halfway through, until the macarons have risen and formed feet.
  11. Allow them to cool completely on the baking sheets.
  12. For the filling, beat the softened butter until creamy, then gradually add the powdered sugar, vanilla extract, milk, and ground cinnamon, mixing until smooth.
  13. Once the macarons are cool, pair them up by size, pipe a small amount of filling onto the flat side of one macaron, and sandwich it with the other.
  14. Refrigerate the filled macarons for at least 24 hours to allow the flavors to meld, then bring to room temperature before serving.
