Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup cinnamon roll icing (store-bought or homemade)

Instructions

  1. Preheat your oven to 325°F.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with 1 cup sugar until smooth and creamy. Add the vanilla extract and mix until combined.
  5. Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  6. In a small bowl, mix the ground cinnamon with the sour cream and heavy cream. Gently fold this mixture into the cream cheese mixture until just combined.
  7. Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.
  9. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.
  10. Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  11. Before serving, drizzle the cinnamon roll icing over the top of the cheesecake.

Notes

  • For a richer flavor, consider adding a teaspoon of nutmeg to the cream cheese mixture.
  • You can also top the cheesecake with chopped pecans or walnuts for added crunch.
  • If you prefer a lighter version, substitute the heavy cream with Greek yogurt.
