Description

Delicious and easy-to-make cinnamon biscuits perfect for a keto diet.

Ingredients

Scale
  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup erythritol (or your preferred keto sweetener)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened almond milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, baking powder, ground cinnamon, salt, and erythritol. Mix well to ensure there are no lumps.
  3. In a separate bowl, whisk together the eggs, melted butter, vanilla extract, and almond milk until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms. If the dough is too sticky, let it sit for a few minutes to thicken.
  5. Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each biscuit slightly with the back of a spoon or your fingers.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  8. Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, consider drizzling a sugar-free glaze made from powdered erythritol and almond milk over the cooled biscuits.
  • You can mix in some chopped nuts or sugar-free chocolate chips into the dough for a different texture.
  • Serve with pork rinds or cucumber slices for a crunchy side option.
