- 1/4 cup erythritol (or your preferred keto sweetener)
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, baking powder, ground cinnamon, salt, and erythritol. Mix well to ensure there are no lumps.
- In a separate bowl, whisk together the eggs, melted butter, vanilla extract, and almond milk until fully combined.
- Pour the wet ingredients into the dry ingredients and stir until a dough forms. If the dough is too sticky, let it sit for a few minutes to thicken.
- Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each biscuit slightly with the back of a spoon or your fingers.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Remove from the oven and allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For added flavor, consider drizzling a sugar-free glaze made from powdered erythritol and almond milk over the cooled biscuits.
