- 2 cups powdered sugar
- 1 cup almond flour
- 1/2 cup granulated sugar
- 3 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract

- 1 cup unsalted butter, softened
- 4 cups powdered sugar (for filling)

Instructions
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a bowl, sift together the powdered sugar and almond flour. Set aside.
- In a separate bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form. Gradually add the granulated sugar, beating until stiff peaks form.
- Gently fold in the vanilla extract, peppermint extract, and green food coloring until the mixture is evenly colored.
- Carefully fold the almond flour mixture into the egg whites in three additions, being cautious not to deflate the batter. The batter should flow like lava and form a ribbon when lifted.
- Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets, leaving space between each macaron.
- Tap the baking sheets on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes, or until they form a dry skin on the surface.
- Bake the macarons for 15-18 minutes, or until they have risen and have a smooth, shiny surface. Let them cool completely on the baking sheets before removing.
- For the filling, beat the softened butter in a bowl until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract, mixing until smooth and fluffy.
- Pipe a dollop of filling onto the flat side of half of the macarons and sandwich with the remaining halves.
- Decorate the tops with sprinkles to resemble Christmas trees.
Notes
- For a festive twist, try adding crushed candy canes to the filling for a minty crunch.
- Alternatively, you can use red food coloring to create a red and green theme for the holidays.
