Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.
  2. Stir in the minced garlic, diced carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. Add the dried oregano, dried basil, and red pepper flakes (if using) to the pot. Stir well to combine.
  4. Pour in the vegetable broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  5. Add the cheese tortellini to the pot and cook according to package instructions, usually about 3-5 minutes.
  6. Stir in the chopped spinach and cook for an additional 2 minutes until the spinach is wilted.
  7. Season the soup with salt and pepper to taste.
  8. Serve hot, garnished with grated Parmesan cheese and fresh parsley.

Notes

  • For a heartier soup, add cooked chicken or sausage for extra protein.
  • Swap the spinach for kale or Swiss chard for a different flavor and texture.
