A festive and comforting Christmas Tortellini Soup perfect for the holiday season.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 6 cups vegetable broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (9-ounce) package refrigerated cheese tortellini
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.
- Stir in the minced garlic, diced carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Add the dried oregano, dried basil, and red pepper flakes (if using) to the pot. Stir well to combine.
- Pour in the vegetable broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Add the cheese tortellini to the pot and cook according to package instructions, usually about 3-5 minutes.
- Stir in the chopped spinach and cook for an additional 2 minutes until the spinach is wilted.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese and fresh parsley.
Notes
- For a heartier soup, add cooked chicken or sausage for extra protein.
- Swap the spinach for kale or Swiss chard for a different flavor and texture.
