  • 4 large eggs
  • 1 ½ cups unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the sugar-free lemon curd:
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1/4 cup granulated erythritol or other sugar substitute
  • 3 large eggs
  • 1/4 cup unsalted butter, cut into small pieces

Instructions

  1. In a mixing bowl, combine the coconut flour, eggs, almond milk, melted coconut oil, vanilla extract, baking powder, and salt. Whisk until smooth and well combined. Let the batter rest for about 10 minutes to thicken.
  2. Heat a non-stick skillet over medium heat and lightly grease it with coconut oil. Pour about 1/4 cup of the batter into the skillet, swirling it to create a thin, even layer. Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for an additional 1-2 minutes. Repeat with the remaining batter, stacking the crepes on a plate.
  3. For the lemon curd, in a medium saucepan, whisk together the lemon juice, lemon zest, erythritol, and eggs. Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes.
  4. Remove from heat and stir in the butter until melted and smooth. Allow to cool slightly.
  5. To serve, fill each crepe with a spoonful of lemon curd, fold or roll them up, and dust with powdered erythritol if desired.
