Ingredients

- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 large egg
- 1 ½ cups almond flour
- 1 tsp baking powder
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ¼ cup chopped fresh chives
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30 seconds, stir, then microwave for another 30 seconds until melted and smooth.
- In a large mixing bowl, whisk together the almond flour, baking powder, garlic powder, onion powder, and salt.
- Add the melted cheese mixture and the egg to the dry ingredients. Mix until a dough forms.
- Fold in the chopped chives and grated Parmesan cheese until evenly distributed.
- Using your hands, form small balls (about 1 inch in diameter) and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.
Notes
- For a spicy kick, add 1 tsp of red pepper flakes to the dough.
- You can also substitute the chives with fresh herbs like parsley or dill for a different flavor profile.
