- 2 pounds salmon fillet, skin on
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/2 cup orange juice
- 1/4 cup chopped walnuts
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, garlic powder, and black pepper.
- Place the salmon on the prepared baking sheet and brush the glaze generously over the top.
- In a saucepan over medium heat, combine the cranberries, sugar, and orange juice. Cook for about 10 minutes, stirring occasionally, until the cranberries burst and the mixture thickens.
- Remove from heat and stir in the chopped walnuts and rosemary.
- Bake the salmon in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.
- Serve the salmon topped with the cranberry relish.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the glaze.
- You can also substitute the walnuts with pecans for a different flavor.
