  • 2 pounds salmon fillet, skin on
  • 1/4 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1/2 cup orange juice
  • 1/4 cup chopped walnuts
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, garlic powder, and black pepper.
  3. Place the salmon on the prepared baking sheet and brush the glaze generously over the top.
  4. In a saucepan over medium heat, combine the cranberries, sugar, and orange juice. Cook for about 10 minutes, stirring occasionally, until the cranberries burst and the mixture thickens.
  5. Remove from heat and stir in the chopped walnuts and rosemary.
  6. Bake the salmon in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.
  7. Serve the salmon topped with the cranberry relish.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the glaze.
  • You can also substitute the walnuts with pecans for a different flavor.
