Delicious maple glazed salmon topped with a fresh cranberry salsa, perfect for Christmas gatherings.

- 4 (6-ounce) salmon fillets
- 1/4 cup pure maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 cup fresh cranberries
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, olive oil, garlic powder, and black pepper.
- Place the salmon fillets on a lined baking sheet and season with salt. Brush the maple glaze generously over the top of each fillet.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.
- While the salmon is baking, prepare the cranberry salsa. In a medium bowl, combine the fresh cranberries, red onion, parsley, honey, lemon juice, and a pinch of salt. Mix well and set aside.
- Once the salmon is done, remove it from the oven and let it rest for a couple of minutes.
- Serve the salmon topped with the cranberry salsa.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the maple glaze.
- Substitute the cranberries with diced mango or pineapple for a tropical twist on the salsa.
