Ingredients

  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/4 cup erythritol (or your preferred low-carb sweetener)
  • 1 tablespoon red food coloring (gel or liquid)
  • 1/2 teaspoon vinegar
  • For serving: Sugar-free whipped cream
  • Fresh berries (optional)

Instructions

  1. In a large mixing bowl, combine the almond flour, cocoa powder, baking powder, and salt. Whisk until well blended.
  2. In another bowl, beat the eggs and then add the almond milk, vanilla extract, erythritol, red food coloring, and vinegar. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. Preheat a non-stick skillet or griddle over medium-low heat. Lightly grease with cooking spray or a small amount of butter.
  5. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes until cooked through.
  6. Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
  7. Serve warm topped with sugar-free whipped cream and fresh berries if desired.

Notes

  • For a festive touch, add a sprinkle of cinnamon or nutmeg to the batter.
  • To make these pancakes even fluffier, separate the egg whites and yolks, beat the egg whites until stiff peaks form, and gently fold them into the batter before cooking.
