- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/4 cup erythritol (or your preferred low-carb sweetener)
- 1 tablespoon red food coloring (gel or liquid)
- 1/2 teaspoon vinegar
- For serving: Sugar-free whipped cream
- Fresh berries (optional)
Instructions
- In a large mixing bowl, combine the almond flour, cocoa powder, baking powder, and salt. Whisk until well blended.
- In another bowl, beat the eggs and then add the almond milk, vanilla extract, erythritol, red food coloring, and vinegar. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat a non-stick skillet or griddle over medium-low heat. Lightly grease with cooking spray or a small amount of butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface. Flip and cook for an additional 2-3 minutes until cooked through.
- Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
- Serve warm topped with sugar-free whipped cream and fresh berries if desired.
Notes
- For a festive touch, add a sprinkle of cinnamon or nutmeg to the batter.
- To make these pancakes even fluffier, separate the egg whites and yolks, beat the egg whites until stiff peaks form, and gently fold them into the batter before cooking.
