Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 2 tablespoons cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vinegar
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup of sugar and continue to beat until creamy. Add the vanilla extract and mix well.
  4. Add the eggs one at a time, mixing well after each addition. Then, add the sour cream, buttermilk, cocoa powder, red food coloring, vinegar, and salt. Mix until fully combined and smooth.
  5. Pour the cheesecake batter over the prepared crust in the springform pan. Tap the pan gently on the counter to release any air bubbles.
  6. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  8. Before serving, you can top the cheesecake with whipped cream and festive red and green sprinkles.

Notes

  • For a lighter version, substitute cream cheese with low-fat cream cheese and use Greek yogurt instead of sour cream.
  • For a chocolate twist, add chocolate chips to the batter before baking.
