Christmas Pinwheel Sugar Cookies are a holiday delight!


Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ cup red and green sprinkles (or colored sugar)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Add the egg, vanilla extract, and almond extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half.
  6. To one half of the dough, add the red and green sprinkles and mix until evenly distributed.
  7. On a piece of parchment paper, roll out the plain dough into a rectangle about ¼ inch thick.
  8. Roll out the colored dough into a rectangle of the same size.
  9. Carefully place the colored dough on top of the plain dough.
  10. Starting from one end, roll the dough tightly into a log, using the parchment paper to help.
  11. Wrap the log in plastic wrap and refrigerate for at least 2 hours or until firm.
  12. Preheat the oven to 350°F. Line baking sheets with parchment paper.
  13. Remove the log from the refrigerator and slice it into ¼ inch thick rounds.
  14. Place the cookies on the prepared baking sheets, leaving space between them.
  15. Bake for 10-12 minutes or until the edges are lightly golden.
  16. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

  • For a festive touch, drizzle melted white chocolate over the cooled cookies.
  • You can also substitute the sprinkles with crushed candy canes for a peppermint flavor.
