Christmas Pinwheel Sugar Cookies are a holiday delight!
Ingredients

- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- ½ cup red and green sprinkles (or colored sugar)
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the egg, vanilla extract, and almond extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half.
- To one half of the dough, add the red and green sprinkles and mix until evenly distributed.
- On a piece of parchment paper, roll out the plain dough into a rectangle about ¼ inch thick.
- Roll out the colored dough into a rectangle of the same size.
- Carefully place the colored dough on top of the plain dough.
- Starting from one end, roll the dough tightly into a log, using the parchment paper to help.
- Wrap the log in plastic wrap and refrigerate for at least 2 hours or until firm.
- Preheat the oven to 350°F. Line baking sheets with parchment paper.
- Remove the log from the refrigerator and slice it into ¼ inch thick rounds.
- Place the cookies on the prepared baking sheets, leaving space between them.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
- For a festive touch, drizzle melted white chocolate over the cooled cookies.
- You can also substitute the sprinkles with crushed candy canes for a peppermint flavor.
