- 1 cup heavy whipping cream
- 4 oz sugar-free white chocolate, chopped
- 1 teaspoon peppermint extract
- 2 tablespoons powdered erythritol (or preferred keto sweetener)
- 1 teaspoon vanilla extract
- Pinch of salt
- Crushed peppermint candies for garnish (optional)
Instructions
- In a medium saucepan over low heat, melt the sugar-free white chocolate, stirring constantly until smooth. Remove from heat and let cool slightly.
- In a large mixing bowl, whip the heavy cream until soft peaks form.
- Gently fold in the melted white chocolate, peppermint extract, powdered erythritol, vanilla extract, and a pinch of salt until well combined. Be careful not to deflate the whipped cream.
- Spoon the mousse into serving dishes and refrigerate for at least 1 hour to set.
- Before serving, garnish with crushed peppermint candies if desired.

- For a richer flavor, add a tablespoon of cocoa powder to the mixture for a chocolate peppermint mousse.
