These festive no-bake cocoa coconut energy bites are perfect for a holiday treat or a quick snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey (or maple syrup), cocoa powder, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
  2. If using, fold in the mini chocolate chips until evenly distributed.
  3. Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Once chilled, transfer the energy bites to an airtight container and store in the refrigerator for up to one week.
