These festive no-bake cocoa coconut energy bites are perfect for a holiday treat or a quick snack.
Ingredients

- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey (or maple syrup), cocoa powder, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
- If using, fold in the mini chocolate chips until evenly distributed.
- Using your hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Once chilled, transfer the energy bites to an airtight container and store in the refrigerator for up to one week.
