Description

A delightful Christmas dish featuring roasted Brussels sprouts with a sweet maple and rosemary glaze, topped with walnuts.


Ingredients

  • 2 pounds Brussels sprouts, trimmed and halved
  • 1/4 cup olive oil
  • 1/4 cup pure maple syrup
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup walnuts, roughly chopped
  • 1/2 cup dried cranberries (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved Brussels sprouts, olive oil, maple syrup, rosemary, salt, and black pepper. Toss until the Brussels sprouts are evenly coated.
  3. Spread the Brussels sprouts mixture in a single layer on a large baking sheet.
  4. Roast in the preheated oven for 20 minutes.
  5. Remove the baking sheet from the oven, stir in the chopped walnuts, and return to the oven for an additional 10-15 minutes, or until the Brussels sprouts are tender and caramelized.
  6. If using, sprinkle the dried cranberries over the Brussels sprouts during the last 5 minutes of roasting.
  7. Once done, remove from the oven and let cool for a few minutes before serving.

Notes

  • For added flavor, try substituting pecans for walnuts.
  • Consider adding a sprinkle of grated Parmesan cheese before serving.
  • To make it a complete meal, serve alongside roasted chicken or turkey.
