  • ¾ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • Pinch of salt
  • 2 large egg whites
  • ¼ teaspoon cream of tartar
  • ¼ cup granulated sugar
  • 4 oz semi-sweet or dark chocolate, melted (for decoration, optional)
  • Sprinkles or crushed candy canes (for decoration, optional)

Instructions

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together shredded coconut, sweetened condensed milk, vanilla, almond extract (if using), and salt.
  3. In another bowl, beat egg whites and cream of tartar until soft peaks form.
  4. Gradually add sugar and beat until stiff peaks form.
  5. Fold the egg white mixture gently into the coconut mixture until fully combined.
  6. Drop spoonfuls of the batter onto the baking sheet.
  7. Bake for 20–25 minutes, or until golden on the edges.
  8. Let cool. Dip bottoms in melted chocolate if desired, and decorate with sprinkles.
