Ingredients

- 1 cup unsweetened cocoa powder
- 1 cup almond flour
- 1/2 cup powdered erythritol (or your preferred low-carb sweetener)
- 1/2 cup unsalted butter, melted
- 1/2 cup heavy cream
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup sugar-free chocolate chips (optional)
- Crushed sugar-free peppermint candies for garnish (optional)
Instructions
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
- In a large mixing bowl, combine the cocoa powder, almond flour, powdered erythritol, and salt. Mix well.
- In another bowl, whisk together the melted butter, heavy cream, peppermint extract, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined. If using, fold in the sugar-free chocolate chips.
- Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.
- Refrigerate for at least 2 hours or until the fudge is firm.
- Once set, lift the fudge out of the dish using the parchment paper and cut into squares.
- If desired, sprinkle crushed sugar-free peppermint candies on top before serving.
Notes
- For a richer flavor, add a pinch of espresso powder to the dry ingredients.
- Substitute the peppermint extract with orange or almond extract for a different festive twist.
