- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons fresh rosemary, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, rosemary, garlic, salt, black pepper, paprika, and oregano until well combined.
- Add the chicken cubes to the marinade, making sure they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat. If using wooden skewers, thread the marinated chicken onto the skewers, leaving a little space between each piece.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for 5 minutes before serving. Garnish with extra lemon slices and rosemary if desired.
