Deliciously guilt-free Christmas Keto Hot Chocolate Bombs filled with sugar-free marshmallows.
Ingredients

- 1 cup sugar-free chocolate chips
- 1/2 cup unsweetened cocoa powder
- 1/4 cup powdered erythritol (or preferred sweetener)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 cup sugar-free mini marshmallows
- 1/4 cup heavy cream (for serving)
- 1/4 cup hot water (for serving)
Instructions
- Begin by melting the sugar-free chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
- Using a silicone mold, spoon about 1 tablespoon of the melted chocolate into each cavity. Use the back of a spoon to spread the chocolate up the sides of the mold, creating a shell. Repeat until all cavities are filled.
- Place the mold in the refrigerator for about 15 minutes, or until the chocolate is firm.
- Once set, carefully remove the chocolate shells from the mold. If any edges are uneven, you can gently warm them with a heat source (like a warm plate) to smooth them out.
- In a mixing bowl, combine the unsweetened cocoa powder, powdered erythritol, vanilla extract, and sea salt. Mix well.
- Take half of the chocolate shells and fill each with about 1 tablespoon of the cocoa mixture and a small handful of sugar-free mini marshmallows.
- To seal the hot chocolate bombs, take the remaining chocolate shells and gently press them on top of the filled shells. Use a bit of melted chocolate to seal the edges if needed.
- Allow the bombs to set at room temperature for about 30 minutes.
- To serve, place one hot chocolate bomb in a mug. Heat the heavy cream and hot water together until steaming, then pour over the bomb. Watch it explode and stir to combine.
Notes
- For a peppermint twist, add a few drops of peppermint extract to the cocoa mixture before filling the bombs.
- Experiment with different flavorings by adding a pinch of cinnamon or nutmeg to the cocoa mixture for a spiced version.
