- 1 cup unsweetened eggnog
- 1/2 cup chia seeds
- 1/4 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract

- 1/2 teaspoon ground cinnamon
- 1 cup heavy whipping cream
- 1 tablespoon powdered erythritol
- 1/2 teaspoon vanilla extract (for whipped cream)
Instructions
- In a large mixing bowl, combine the unsweetened almond milk, unsweetened eggnog, chia seeds, erythritol, vanilla extract, nutmeg, and cinnamon. Whisk well until all ingredients are thoroughly mixed.
- Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and thicken the mixture.
- Once the chia pudding has set, prepare the cinnamon whipped cream. In a mixing bowl, beat the heavy whipping cream with an electric mixer until soft peaks form.
- Gradually add the powdered erythritol and vanilla extract, continuing to beat until stiff peaks form.
- To serve, spoon the chia pudding into individual bowls or glasses. Top each serving with a generous dollop of cinnamon whipped cream.
- Optionally, sprinkle a little extra ground cinnamon or nutmeg on top for garnish.
