- 2 ripe avocados
- 2 cups cooked turkey, shredded
- 1 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat your oven to 375°F. If you have leftover turkey, you can roast it in the oven for about 15-20 minutes to warm it up and enhance the flavor.
- In a large mixing bowl, combine the shredded turkey, celery, red onion, mayonnaise, Dijon mustard, parsley, thyme, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly coated.
- Cut the avocados in half and remove the pit. Scoop out a small portion of the flesh to create a larger cavity for the filling.
- Drizzle the lemon juice over the avocado halves to prevent browning.
- Generously fill each avocado half with the turkey mixture.
- Place the stuffed avocados on a baking sheet and bake in the preheated oven for 10-15 minutes, or until heated through and slightly golden on top.
- Remove from the oven and let cool slightly before serving.
Notes
- For a spicy kick, add diced jalapeños or a dash of hot sauce to the turkey mixture.
- Substitute the turkey with shredded chicken or a plant-based protein for a different flavor profile.
