Ingredients

  • 2 ripe avocados
  • 2 cups cooked turkey, shredded
  • 1 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 375°F. If you have leftover turkey, you can roast it in the oven for about 15-20 minutes to warm it up and enhance the flavor.
  2. In a large mixing bowl, combine the shredded turkey, celery, red onion, mayonnaise, Dijon mustard, parsley, thyme, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly coated.
  3. Cut the avocados in half and remove the pit. Scoop out a small portion of the flesh to create a larger cavity for the filling.
  4. Drizzle the lemon juice over the avocado halves to prevent browning.
  5. Generously fill each avocado half with the turkey mixture.
  6. Place the stuffed avocados on a baking sheet and bake in the preheated oven for 10-15 minutes, or until heated through and slightly golden on top.
  7. Remove from the oven and let cool slightly before serving.
