Delicious and festive zucchini and cheese bites perfect for Christmas gatherings.
Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 cup chopped fresh parsley (optional)
- Olive oil for frying
Instructions
- Place the grated zucchinis in a colander and sprinkle with salt. Let them sit for about 15 minutes to draw out excess moisture. After 15 minutes, squeeze the zucchinis with your hands to remove as much liquid as possible.
- In a large mixing bowl, combine the drained zucchinis, cheddar cheese, Parmesan cheese, flour, eggs, black pepper, garlic powder, onion powder, paprika, and parsley (if using). Mix until well combined.
- Heat a large skillet over medium heat and add enough olive oil to coat the bottom of the pan.
- Once the oil is hot, drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the bites from the skillet and place them on a paper towel-lined plate to absorb excess oil. Repeat with the remaining mixture.
- Serve warm, garnished with additional parsley if desired.
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the mixture.
- You can substitute the cheddar cheese with mozzarella for a different flavor profile.
