Ingredients

- 2 cups heavy cream
- 1 cup unsweetened almond milk
- 3/4 cup erythritol or your preferred keto-friendly sweetener
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon rum extract (optional)
Instructions
- In a medium saucepan, combine the heavy cream, almond milk, and erythritol. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally to dissolve the sweetener.
- In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking continuously to temper the eggs.
- Gradually add the tempered egg yolk mixture back into the saucepan with the remaining cream mixture, whisking constantly. Cook over low heat for about 5-7 minutes, or until the mixture thickens enough to coat the back of a spoon.
- Remove the saucepan from heat and stir in the vanilla extract, nutmeg, cinnamon, salt, and rum extract if using. Allow the mixture to cool to room temperature.
- Once cooled, cover the mixture and refrigerate for at least 2 hours or until completely chilled.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
- Serve scoops of the eggnog-flavored ice cream in bowls or cones, and sprinkle with additional nutmeg or cinnamon if desired.
Notes
- For a creamier texture, let the ice cream sit at room temperature for about 10 minutes before serving.
- You can add crushed pecans or walnuts for added texture and flavor.
