Creamy Christmas Eggnog-Flavored Keto Ice Cream that is perfect for the holiday season.


Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 3/4 cup erythritol or your preferred keto-friendly sweetener
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon rum extract (optional)

Instructions

  1. In a medium saucepan, combine the heavy cream, almond milk, and erythritol. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally to dissolve the sweetener.
  2. In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking continuously to temper the eggs.
  3. Gradually add the tempered egg yolk mixture back into the saucepan with the remaining cream mixture, whisking constantly. Cook over low heat for about 5-7 minutes, or until the mixture thickens enough to coat the back of a spoon.
  4. Remove the saucepan from heat and stir in the vanilla extract, nutmeg, cinnamon, salt, and rum extract if using. Allow the mixture to cool to room temperature.
  5. Once cooled, cover the mixture and refrigerate for at least 2 hours or until completely chilled.
  6. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
  8. Serve scoops of the eggnog-flavored ice cream in bowls or cones, and sprinkle with additional nutmeg or cinnamon if desired.

Notes

  • For a creamier texture, let the ice cream sit at room temperature for about 10 minutes before serving.
  • You can add crushed pecans or walnuts for added texture and flavor.
