  • 1/2 cup coconut flour
  • 1/2 cup erythritol (or preferred keto sweetener)
  • 1 tablespoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon rum extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, nutmeg, cinnamon, and salt. Whisk until well blended.
  3. In another bowl, whisk together the eggs, almond milk, melted butter, vanilla extract, and rum extract (if using) until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

  • For added flavor, consider adding 1/2 cup of chopped pecans or walnuts to the batter before baking.
