A festive and delicious Christmas Eggnog Bread perfect for the holiday season.

- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup erythritol (or preferred keto sweetener)
- 1 tablespoon baking powder
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup unsweetened almond milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon rum extract (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, nutmeg, cinnamon, and salt. Whisk until well blended.
- In another bowl, whisk together the eggs, almond milk, melted butter, vanilla extract, and rum extract (if using) until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- For added flavor, consider adding 1/2 cup of chopped pecans or walnuts to the batter before baking.
- You can also top the bread with a keto-friendly cream cheese frosting for a festive touch.
- Serve with pork rinds or cucumber slices for a delightful snack.
