Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a large mixing bowl, combine the almond flour, baking powder, baking soda, and salt. Mix well to ensure the dry ingredients are evenly distributed.
  3. In another bowl, whisk together the eggs, melted coconut oil, orange juice, orange zest, vanilla extract, and granulated sugar until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the chopped cranberries until evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
