- 1/4 cup coconut oil, melted

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
- In a large mixing bowl, combine the almond flour, baking powder, baking soda, and salt. Mix well to ensure the dry ingredients are evenly distributed.
- In another bowl, whisk together the eggs, melted coconut oil, orange juice, orange zest, vanilla extract, and granulated sugar until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chopped cranberries until evenly distributed throughout the batter.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
