Ingredients

  • 16 large cremini or button mushrooms, stems removed
  • 8 ounces brie cheese, cut into small cubes
  • 1 cup fresh cranberries, chopped
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped walnuts (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped cranberries, honey, thyme, salt, and pepper. Mix well.
  3. Add the brie cheese cubes to the cranberry mixture and gently fold to combine.
  4. Drizzle the olive oil over the mushroom caps and place them on a baking sheet.
  5. Spoon the cranberry and brie mixture into each mushroom cap, filling them generously.
  6. If using, sprinkle chopped walnuts on top of the stuffed mushrooms.
  7. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
