- 16 large cremini or button mushrooms, stems removed
- 8 ounces brie cheese, cut into small cubes
- 1 cup fresh cranberries, chopped
- 1 tablespoon honey
- 1 teaspoon fresh thyme leaves
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped walnuts (optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the chopped cranberries, honey, thyme, salt, and pepper. Mix well.
- Add the brie cheese cubes to the cranberry mixture and gently fold to combine.
- Drizzle the olive oil over the mushroom caps and place them on a baking sheet.
- Spoon the cranberry and brie mixture into each mushroom cap, filling them generously.
- If using, sprinkle chopped walnuts on top of the stuffed mushrooms.
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
- Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.

- For a spicier kick, add a pinch of red pepper flakes to the cranberry mixture.
