Ingredients

  • 2 pounds dried salted codfish
  • 1 cup olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, chopped (red or green)
  • 2 medium tomatoes, chopped
  • 1 cup pitted green olives, sliced
  • 1 cup capers, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. Rinse the dried salted codfish under cold water to remove excess salt. Soak the cod in water for 24 hours, changing the water several times. After soaking, drain and rinse again.
  2. In a large pot, cover the soaked cod with fresh water and bring to a boil. Reduce heat and simmer for about 20 minutes or until the fish is tender. Drain and let cool slightly. Remove any skin and bones, then flake the fish into bite-sized pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  4. Add the bell pepper and tomatoes to the skillet, cooking until softened, about 5 minutes.
  5. Stir in the flaked cod, olives, capers, oregano, black pepper, and red pepper flakes (if using). Cook for an additional 5-7 minutes, allowing the flavors to meld.
  6. Remove from heat and stir in the lime juice, parsley, and cilantro. Adjust salt to taste.
  7. Serve warm, garnished with additional parsley or cilantro if desired.

Notes

  • For a spicier version, add diced jalapeños or a splash of hot sauce to the mixture.
  • Serve the Bacalao Navideño with warm corn tortillas or over a bed of rice for a complete meal.
