- 8 ounces cream cheese, softened
- 1 cup powdered sugar

- 1 cup semi-sweet chocolate chips
- 1 tablespoon unsweetened cocoa powder
- Pinch of salt
Instructions
- In a mixing bowl, combine the finely chopped macadamia nuts, softened cream cheese, powdered sugar, and vanilla extract. Mix until well combined and smooth.
- Refrigerate the mixture for about 30 minutes to make it easier to handle.
- Once chilled, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the balls on a parchment-lined baking sheet.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring in between until smooth.
- Dip each truffle ball into the melted chocolate, allowing any excess to drip off, then return them to the baking sheet.
- In a small bowl, combine the cocoa powder and a pinch of salt. Once the chocolate on the truffles has set slightly but is still tacky, roll each truffle in the cocoa mixture to coat.
- Refrigerate the truffles for at least 1 hour to firm up before serving.
