Ingredients

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon erythritol or your preferred sweetener
  • 2 tablespoons melted coconut oil or unsalted butter
  • For the sugar-free syrup:
  • 1/2 cup water
  • 1/2 cup erythritol
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon

Instructions

  1. In a mixing bowl, combine almond flour, baking powder, ground cinnamon, and salt.
  2. In another bowl, whisk together the eggs, almond milk, vanilla extract, erythritol, and melted coconut oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Preheat your waffle maker according to the manufacturer’s instructions and lightly grease it with cooking spray or a little coconut oil.
  5. Pour about 1/2 cup of batter into the waffle maker for each waffle and cook until golden brown and crispy, usually about 4-5 minutes.
  6. While the waffles are cooking, prepare the sugar-free syrup by combining water, erythritol, vanilla extract, and cinnamon in a small saucepan.
  7. Bring the mixture to a simmer over medium heat, stirring until the erythritol is dissolved, then let it simmer for about 5 minutes.
  8. Remove from heat and let cool slightly.
  9. Serve the waffles warm with the sugar-free syrup drizzled on top.

Notes

  • For a festive touch, add a handful of chopped pecans or walnuts to the batter before cooking.
  • Try substituting the almond flour with coconut flour, but use only 1/2 cup, as coconut flour is more absorbent.
