  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, melted (for brushing)
  • 1 tbsp granulated erythritol (for topping)
  • 1 tsp ground cinnamon (for topping)

Instructions

  1. In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for 30 seconds, then stir. Repeat in 30-second intervals until the mixture is fully melted and combined.
  2. In a separate bowl, whisk together the almond flour, baking powder, 2 teaspoons of erythritol, 1 teaspoon of cinnamon, and salt.
  3. Add the melted cheese mixture and the egg to the dry ingredients. Mix until a dough forms.
  4. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  5. On a clean surface, sprinkle a little almond flour and roll out the dough into a rectangle about ½ inch thick.
  6. Brush the surface with melted butter and sprinkle with the remaining erythritol and cinnamon.
  7. Cut the dough into strips about 1 inch wide. Twist each strip and place them on the prepared baking sheet.
  8. Bake for 12-15 minutes or until golden brown. Allow to cool slightly before serving.
