Ingredients

  • 2 cups raw walnuts
  • 1/2 cup allulose sweetener
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon coconut oil (melted)
  • 1/4 cup allulose sweetener (for drizzle)
  • 1 tablespoon water
  • 1/2 teaspoon vanilla extract (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the raw walnuts, 1/2 cup allulose sweetener, ground cinnamon, salt, melted coconut oil, and 1/4 teaspoon vanilla extract. Stir until the walnuts are evenly coated.
  3. Spread the coated walnuts in a single layer on the prepared baking sheet.
  4. Bake in the preheated oven for 10-12 minutes, stirring halfway through, until the walnuts are golden brown and fragrant. Keep a close eye to prevent burning.
  5. While the walnuts are baking, prepare the allulose drizzle. In a small saucepan, combine 1/4 cup allulose sweetener, water, and 1/2 teaspoon vanilla extract. Heat over low heat, stirring until the allulose is dissolved and the mixture is smooth. Remove from heat and let cool slightly.
  6. Once the walnuts are done baking, remove them from the oven and let them cool for a few minutes. Drizzle the allulose mixture over the warm walnuts and toss to coat evenly.
  7. Allow the glazed walnuts to cool completely on the baking sheet before serving.

Notes

  • For a spicier flavor, add a pinch of nutmeg or ginger to the walnut mixture before baking.
  • Substitute pecans or almonds for walnuts for a different nutty flavor.
