Ingredients

  • 2 ½ cups unsweetened shredded coconut
  • ½ cup almond flour
  • ⅓ cup granulated erythritol or your preferred keto sweetener
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon salt
  • 4 ounces sugar-free dark chocolate, chopped
  • 1 teaspoon coconut oil

Instructions

  1. Preheat your oven to 325°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, almond flour, erythritol, egg whites, vanilla extract, almond extract, and salt. Mix until well combined and the mixture holds together when pressed.
  3. Using a tablespoon or a small cookie scoop, form the mixture into small mounds and place them on the prepared baking sheet, leaving some space between each macaroon.
  4. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let them cool completely on the baking sheet.
  5. While the macaroons are cooling, melt the sugar-free dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  6. Once the macaroons are cool, dip the bottoms into the melted chocolate, allowing any excess to drip off. Place the chocolate-dipped macaroons back on the parchment paper to set.
  7. Refrigerate the macaroons for about 30 minutes to allow the chocolate to harden before serving.

Notes
