Description

Delicious and cheesy cauliflower tots perfect for Christmas, served with a creamy ranch dip.


Ingredients

  • 2 cups cauliflower florets (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped fresh parsley (optional for garnish)

For the ranch dip:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large pot, steam the cauliflower florets until tender, about 8-10 minutes. If using frozen cauliflower, follow package instructions for steaming. Drain and let cool slightly.
  3. Once cooled, use a clean kitchen towel to squeeze out as much moisture as possible from the cauliflower.
  4. In a large bowl, combine the drained cauliflower, cheddar cheese, Parmesan cheese, almond flour, eggs, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  5. Using your hands, form the mixture into small tot shapes and place them on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the tots are golden brown and crispy, flipping them halfway through for even cooking.
  7. While the tots are baking, prepare the ranch dip by mixing together sour cream, mayonnaise, dill, garlic powder, onion powder, salt, and pepper in a small bowl. Adjust seasoning to taste.
  8. Once the tots are done, remove them from the oven and let them cool for a few minutes. Serve warm with the ranch dip and garnish with chopped parsley if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the cauliflower mixture.
  • You can substitute the cheddar cheese with pepper jack for a cheesy, spicy version.
