Delicious Brie & Cranberry Pastry Bites perfect for Christmas appetizers.
Ingredients

- 8 ounces of brie cheese, cut into small pieces
- 1 cup of cranberry sauce (store-bought or homemade)
- 1 package (1 sheet) of puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tablespoon of fresh rosemary, chopped (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the thawed puff pastry sheet to smooth out creases. Cut the pastry into 2-inch squares.
- Place a small piece of brie cheese in the center of each pastry square. Top with about 1 teaspoon of cranberry sauce.
- If using, sprinkle a little chopped rosemary on top of the cranberry sauce. Season with a pinch of salt and pepper.
- Fold the corners of each pastry square towards the center, pinching to seal the filling inside.
- Place the filled pastry bites on the prepared baking sheet. Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- For a sweeter twist, add a sprinkle of brown sugar on top of the cranberry sauce before sealing.
- Substitute the cranberry sauce with fig jam or apple chutney for a different flavor profile.
