Ingredients

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 tablespoon all-purpose flour (optional, for a firmer texture)
  • 1 tablespoon butter (for greasing the pan)

Instructions

  1. Preheat your oven to 400°F.
  2. Grease a 9-inch springform pan with butter and line the base with parchment paper.
  3. In a mixing bowl, whip the softened cream cheese until smooth.
  4. Gradually add the granulated sugar and mix until creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Fold in the vanilla extract, heavy cream, cocoa powder, and salt.
  7. If desired, add the flour and mix gently until just combined.
  8. Transfer the batter into the prepared springform pan.
  9. Bake for 25-30 minutes, until the top is firm but the center is slightly wobbly.
  10. Turn off the oven and let the cheesecake rest inside for 10 minutes.
  11. Remove from the oven and allow to cool to room temperature.
  12. Refrigerate for a minimum of 4 hours, ideally overnight, before serving.
  13. Serve chilled, optionally garnished with whipped cream and chocolate shavings.
