  • 1/4 cup chopped nuts (optional)

Instructions

  1. Place the cooked quinoa in a large bowl.
  2. Add the almond butter, honey or maple syrup, cocoa powder, vanilla extract, and salt to the bowl.
  3. Mix everything together thoroughly until it forms a cohesive and sticky mixture.
  4. Gently fold in the mini chocolate chips and any chopped nuts you wish to include.
  5. Prepare a baking sheet by lining it with parchment paper.
  6. Take small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter, then arrange them on the lined baking sheet.
  7. Transfer the baking sheet to the refrigerator and allow them to chill for at least 30 minutes to set.
