Instructions
- Place the cooked quinoa in a large bowl.
- Add the almond butter, honey or maple syrup, cocoa powder, vanilla extract, and salt to the bowl.
- Mix everything together thoroughly until it forms a cohesive and sticky mixture.
- Gently fold in the mini chocolate chips and any chopped nuts you wish to include.
- Prepare a baking sheet by lining it with parchment paper.
- Take small portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter, then arrange them on the lined baking sheet.
- Transfer the baking sheet to the refrigerator and allow them to chill for at least 30 minutes to set.
