Rich and creamy chocolate mousse that is a delightful dessert for chocolate lovers.

- 8 ounces semi-sweet chocolate, chopped
- 2 tablespoons unsalted butter
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- Pinch of salt
Instructions
- In a heatproof bowl, combine the chopped chocolate and butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks, granulated sugar, and vanilla extract until the mixture is pale and thick.
- Gradually add the melted chocolate mixture to the egg yolk mixture, stirring until well combined.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
- In a clean bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until fully incorporated.
- Spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, or until set.
- Serve chilled, garnished with whipped cream or chocolate shavings if desired.
Notes
- For a coffee-flavored mousse, add 1 tablespoon of instant coffee granules to the melted chocolate mixture.
- To make a lighter version, substitute half of the heavy cream with Greek yogurt for added protein and a tangy flavor.
