- 1 cup unsweetened cocoa powder
- 1/2 cup creamy almond butter
- 1/2 cup chopped macadamia nuts
- 1/4 cup powdered erythritol or preferred sweetener
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt, plus additional for garnish
Instructions
- Begin by melting the coconut oil in a saucepan over low heat.
- Once melted, remove from heat and whisk in the cocoa powder until fully integrated.
- Add the almond butter, powdered erythritol, vanilla extract, and 1/2 teaspoon of sea salt, stirring until the mixture is silky and uniform.
- Incorporate the chopped macadamia nuts into the chocolate blend, ensuring they are well mixed.
- Spoon the mixture into silicone molds or a prepared muffin tin, filling each cavity about three-quarters full.
- Lightly sprinkle sea salt over the top of each filled mold.
- Transfer the molds to the freezer and allow them to chill for 1-2 hours, or until they are firm to the touch.
- Once set, gently pop the chocolate bites out of the molds and store them in an airtight container, keeping them in the refrigerator or freezer.
Notes
- For a refreshing twist, consider adding a teaspoon of peppermint extract for a minty chocolate flavor.
- Swap out the macadamia nuts for chopped pecans or walnuts for a different crunch and flavor profile.
