- 8 ounces semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for a silkier finish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a spacious bowl, beat the softened butter and powdered sugar together until the mixture is airy and pale.
- Incorporate the vanilla extract, blending until fully integrated.
- Gradually sift in the flour and salt, stirring until a cohesive dough emerges.
- Transfer the dough onto a floured surface and roll it into a log shape, approximately 1 inch in diameter.
- Wrap this log tightly in plastic wrap and chill it in the refrigerator for at least half an hour.
- After chilling, remove the log and slice it into rounds that are about 1/4 inch thick, arranging them on the prepared baking sheet.
- Bake these for 12-15 minutes, or until the edges turn a light golden brown.
- Allow the cookies to cool completely on a wire rack.
- While your cookies are cooling, melt the chocolate chips along with the coconut oil (if using) in a microwave-safe bowl in 30-second bursts, stirring in between until you achieve a smooth consistency.
- Once the cookies are cool, dip half of each cookie into the melted chocolate, letting any excess chocolate drip off before placing them back on the parchment paper.
- To set the chocolate, allow the cookies to sit at room temperature or place them in the refrigerator for about 15 minutes.
