Ingredients

  • 1 cup whole wheat bran
  • 1 cup buttermilk
  • 1/2 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped pitted dates
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the whole wheat bran and buttermilk. Let it sit for about 10 minutes to soften the bran.
  3. In another bowl, whisk together the brown sugar, vegetable oil, egg, and vanilla extract until smooth.
  4. Add the wet mixture to the bran mixture and stir until combined.
  5. In a separate bowl, mix the all-purpose flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the chopped dates and chocolate chips.
  8. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a healthier twist, substitute half of the all-purpose flour with almond flour.
  • To add a nutty flavor, mix in 1/2 cup of chopped walnuts or pecans.
