Delicious and healthy Chocolate-Date Bran Muffins that are perfect for a snack or breakfast.

- 1 cup whole wheat bran
- 1 cup buttermilk
- 1/2 cup packed brown sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped pitted dates
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the whole wheat bran and buttermilk. Let it sit for about 10 minutes to soften the bran.
- In another bowl, whisk together the brown sugar, vegetable oil, egg, and vanilla extract until smooth.
- Add the wet mixture to the bran mixture and stir until combined.
- In a separate bowl, mix the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped dates and chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a healthier twist, substitute half of the all-purpose flour with almond flour.
- To add a nutty flavor, mix in 1/2 cup of chopped walnuts or pecans.
