  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips
  • 1 tablespoon unsalted butter, melted
  • Powdered erythritol for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, whisk together the almond milk, eggs, erythritol, vanilla extract, cinnamon, and salt until well combined.
  3. Add the croissant pieces to the egg mixture, gently folding them in to ensure they are well coated. Let the mixture sit for about 10 minutes to allow the croissants to soak up the liquid.
  4. Fold in the sugar-free chocolate chips, ensuring they are evenly distributed throughout the mixture.
  5. Pour the croissant mixture into the prepared baking dish and drizzle the melted butter on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bake to cool for about 5-10 minutes before serving. Dust with powdered erythritol if desired.
