Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/2 cup cherry preserves
  • 4 ounces semi-sweet chocolate, chopped
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes. Add the vanilla extract and egg yolk, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be soft.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Use your thumb to create an indentation in the center of each ball.
  6. Fill each indentation with about 1/2 teaspoon of cherry preserves.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are set. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. While the cookies are cooling, melt the chopped chocolate and vegetable oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  9. Once the cookies are completely cool, dip the tops into the melted chocolate or drizzle the chocolate over the cookies. Allow the chocolate to set before serving.

Notes

  • For a richer flavor, try adding a teaspoon of almond extract to the dough.
  • You can substitute the cherry preserves with raspberry or strawberry preserves for a different twist.
