Chocolate-Covered Cherry Thumbprints are delightful cookies filled with cherry preserves and topped with rich chocolate, perfect for any occasion.

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 1/2 cup cherry preserves
- 4 ounces semi-sweet chocolate, chopped
- 1 tablespoon vegetable oil
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes. Add the vanilla extract and egg yolk, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough will be soft.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Use your thumb to create an indentation in the center of each ball.
- Fill each indentation with about 1/2 teaspoon of cherry preserves.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies are cooling, melt the chopped chocolate and vegetable oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Once the cookies are completely cool, dip the tops into the melted chocolate or drizzle the chocolate over the cookies. Allow the chocolate to set before serving.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the dough.
- You can substitute the cherry preserves with raspberry or strawberry preserves for a different twist.
