  • 8 ounces cream cheese, softened
  • ½ cup granulated erythritol
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup sugar-free chocolate chips

Instructions

  1. Preheat the oven to 350°F. Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Stir until well mixed.
  3. Add the melted butter, egg, and vanilla extract. Mix until a dough forms.
  4. Press the dough evenly into the bottom of the prepared baking dish to form the crust.
  5. In another bowl, beat the softened cream cheese and erythritol until smooth.
  6. Add the egg and vanilla extract, mixing until well combined. Fold in the sugar-free chocolate chips.
  7. Spread the cheesecake mixture over the crust in the baking dish.
  8. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  9. Remove from the oven and allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set completely.
  10. Cut into bars and serve chilled or at room temperature.
