  • 1 cup sour cream
  • 8 oz semi-sweet chocolate, melted and cooled
  • 1 cup fresh raspberries
  • 2 tablespoons powdered sugar
  • 1 teaspoon lemon juice
  • 1 pre-made graham cracker crust (9-inch)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until well combined.
  3. Mix in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream and melted chocolate until fully incorporated and smooth.
  5. In a separate bowl, combine the fresh raspberries, powdered sugar, and lemon juice. Use a fork to mash the raspberries slightly, creating a chunky sauce.
  6. Pour the chocolate cheesecake batter into the graham cracker crust.
  7. Drop spoonfuls of the raspberry mixture on top of the cheesecake batter. Use a knife or skewer to swirl the raspberry sauce into the cheesecake for a marbled effect.
  8. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.
  10. Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
