- 1 cup sour cream
- 8 oz semi-sweet chocolate, melted and cooled
- 1 cup fresh raspberries
- 2 tablespoons powdered sugar
- 1 teaspoon lemon juice
- 1 pre-made graham cracker crust (9-inch)
Instructions
- Preheat the oven to 325°F (160°C).
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until well combined.
- Mix in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream and melted chocolate until fully incorporated and smooth.
- In a separate bowl, combine the fresh raspberries, powdered sugar, and lemon juice. Use a fork to mash the raspberries slightly, creating a chunky sauce.
- Pour the chocolate cheesecake batter into the graham cracker crust.
- Drop spoonfuls of the raspberry mixture on top of the cheesecake batter. Use a knife or skewer to swirl the raspberry sauce into the cheesecake for a marbled effect.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.
- Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
