Chocolate Beetroot Brownie Bites are a must-try treat!

- 1 cup cooked and pureed beetroots
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- In a large mixing bowl, combine the pureed beetroots and sugar, mixing until well blended.
- Add the cocoa powder, flour, vegetable oil, eggs, vanilla extract, baking powder, and salt. Stir until the batter is smooth and well combined.
- Gently fold in the chocolate chips.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the brownie bites to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the batter.
- You can also substitute half of the all-purpose flour with almond flour for a gluten-free version.
