  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1/2 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1/4 cup chopped green onions
  • Soy sauce (to serve)
  • Chili oil (to serve)

Instructions

  1. In a mixing bowl, combine the flour and salt.
  2. Gradually pour in the boiling water while stirring with a fork until the mixture starts to clump together.
  3. Add the cold water and knead the dough until it becomes smooth and elastic.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. For the filling, combine all the filling ingredients in a bowl and mix thoroughly until well blended.
  6. Cover the bowl and refrigerate for at least 30 minutes to enhance the flavors.
  7. Once the dough has rested, cut it into 12 equal portions.
  8. Roll each piece into a ball and then flatten it into a disc approximately 3 inches wide.
  9. Spoon about 1 tablespoon of the filling into the center of each disc.
  10. Carefully fold the edges of the dough over the filling, creating pleats, and pinch the top to seal securely.
  11. Prepare a steamer by lining it with parchment paper or cabbage leaves to prevent sticking.
  12. Arrange the dumplings in the steamer, ensuring they are spaced apart.
  13. Steam the dumplings over boiling water for 15-20 minutes, or until the dough appears translucent and the filling is fully cooked.
  14. Enjoy the dumplings hot, accompanied by soy sauce and chili oil for dipping.

  • For a vegetarian option, replace the ground pork with finely chopped mushrooms and tofu, and use vegetable broth.
