Instructions
- In a mixing bowl, combine the flour and salt.
- Gradually pour in the boiling water while stirring with a fork until the mixture starts to clump together.
- Add the cold water and knead the dough until it becomes smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- For the filling, combine all the filling ingredients in a bowl and mix thoroughly until well blended.
- Cover the bowl and refrigerate for at least 30 minutes to enhance the flavors.
- Once the dough has rested, cut it into 12 equal portions.
- Roll each piece into a ball and then flatten it into a disc approximately 3 inches wide.
- Spoon about 1 tablespoon of the filling into the center of each disc.
- Carefully fold the edges of the dough over the filling, creating pleats, and pinch the top to seal securely.
- Prepare a steamer by lining it with parchment paper or cabbage leaves to prevent sticking.
- Arrange the dumplings in the steamer, ensuring they are spaced apart.
- Steam the dumplings over boiling water for 15-20 minutes, or until the dough appears translucent and the filling is fully cooked.
- Enjoy the dumplings hot, accompanied by soy sauce and chili oil for dipping.

- For a vegetarian option, replace the ground pork with finely chopped mushrooms and tofu, and use vegetable broth.
