Delicious Chilli & Lime Prawn Skewers served with a refreshing Mango Salsa.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 8 wooden skewers (soaked in water for 30 minutes if using)
- For the mango salsa:
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon fresh lime juice
- Salt to taste
Instructions
- In a bowl, combine olive oil, lime juice, chili powder, garlic powder, salt, black pepper, and cayenne pepper. Add the shrimp and toss to coat evenly. Marinate for at least 15 minutes.
- While the shrimp is marinating, prepare the mango salsa. In a separate bowl, mix together diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Set aside.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
- Grill the skewers for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
- Serve the shrimp skewers hot with the mango salsa on the side.
Notes
- For a smoky flavor, add a pinch of smoked paprika to the marinade.
- You can substitute the shrimp with chicken or tofu for a different protein option.
