Description

Delicious Chilli & Lime Prawn Skewers served with a refreshing Mango Salsa.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 8 wooden skewers (soaked in water for 30 minutes if using)
  • For the mango salsa:
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • Salt to taste

Instructions

  1. In a bowl, combine olive oil, lime juice, chili powder, garlic powder, salt, black pepper, and cayenne pepper. Add the shrimp and toss to coat evenly. Marinate for at least 15 minutes.
  2. While the shrimp is marinating, prepare the mango salsa. In a separate bowl, mix together diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Set aside.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer.
  5. Grill the skewers for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
  6. Serve the shrimp skewers hot with the mango salsa on the side.

Notes

  • For a smoky flavor, add a pinch of smoked paprika to the marinade.
  • You can substitute the shrimp with chicken or tofu for a different protein option.
