Ingredients

- 2 cups carrots, peeled and chopped
- 1 cup fresh orange juice
- 1 tablespoon fresh ginger, grated
- 1/2 cup Greek yogurt
- 1/4 cup honey (or maple syrup for a vegan option)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 cup chopped walnuts (optional, for garnish)
- Fresh mint leaves (optional, for garnish)
Instructions
- In a medium saucepan, combine the chopped carrots and enough water to cover them. Bring to a boil and cook until the carrots are tender, about 15 minutes. Drain and let cool slightly.
- In a blender, combine the cooked carrots, orange juice, grated ginger, Greek yogurt, honey, vanilla extract, salt, and ground cinnamon. Blend until smooth and creamy.
- Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
- Pour the mixture into a bowl or individual serving cups. Cover and refrigerate for at least 2 hours or until chilled.
- Before serving, stir the mixture gently. Garnish with chopped walnuts and fresh mint leaves if desired.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the mixture before blending.
- Substitute the walnuts with toasted coconut flakes for a different texture and flavor.
