Ingredients

  • 2 cups carrots, peeled and chopped
  • 1 cup fresh orange juice
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup Greek yogurt
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts (optional, for garnish)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. In a medium saucepan, combine the chopped carrots and enough water to cover them. Bring to a boil and cook until the carrots are tender, about 15 minutes. Drain and let cool slightly.
  2. In a blender, combine the cooked carrots, orange juice, grated ginger, Greek yogurt, honey, vanilla extract, salt, and ground cinnamon. Blend until smooth and creamy.
  3. Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
  4. Pour the mixture into a bowl or individual serving cups. Cover and refrigerate for at least 2 hours or until chilled.
  5. Before serving, stir the mixture gently. Garnish with chopped walnuts and fresh mint leaves if desired.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the mixture before blending.
  • Substitute the walnuts with toasted coconut flakes for a different texture and flavor.
