- 1 pound large shrimp, peeled and deveined
- 1 cup fresh pineapple, cut into 1-inch cubes
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Skewers (wooden or metal)
Instructions
- Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, combine panko breadcrumbs, chili powder, garlic powder, salt, and black pepper. Mix well.
- Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the panko mixture in a third.
- Dredge each shrimp in flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the panko mixture.
- Thread the shrimp and pineapple cubes onto the skewers, alternating between shrimp and pineapple.
- Brush the skewers lightly with olive oil to prevent sticking.
- Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque and the panko is golden brown.
- Remove from the grill and let rest for a minute before serving.
Notes
- For a spicy kick, add diced jalapeños to the skewers.
- Substitute the pineapple with bell peppers or zucchini for a different flavor profile.
