Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Skewers (wooden or metal)

Instructions

  1. Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, combine panko breadcrumbs, chili powder, garlic powder, salt, and black pepper. Mix well.
  3. Set up a breading station: Place the flour in one shallow dish, the beaten eggs in another, and the panko mixture in a third.
  4. Dredge each shrimp in flour, shaking off excess. Dip into the beaten eggs, then coat thoroughly with the panko mixture.
  5. Thread the shrimp and pineapple cubes onto the skewers, alternating between shrimp and pineapple.
  6. Brush the skewers lightly with olive oil to prevent sticking.
  7. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque and the panko is golden brown.
  8. Remove from the grill and let rest for a minute before serving.

Notes

  • For a spicy kick, add diced jalapeños to the skewers.
